Salmon grapefruit salad


Ingredients:

  • 4 skinless salmon fillets (4 oz each)
  • 1 pink grapefruit, peel & pith removed (cut into pieces)
  • 2 tablespoon Olive oil, divided
  • 1 tablespoon red wine vinegar
  • 1 small cucumber, diced
  • 4 small radishes, thinly sliced
  • 6 cup arugula
  • Kosher salt & pepper to taste
